Omelettes
Crack 2 or 3 eggs per person into a mixing bowl and beat with a fork, or an electric whisk, until fluffy. Add about ½ teaspoon of mixed herbs and some freshly ground black pepper.
Melt a knob of butter in a frying pan and add the whisked eggs.
Cook slowly until the mixture becomes firm. (You can tilt the pan to move the mixture around to make sure it covers the pan but don't stir it or you will end up with scrambled eggs).
This can be served with a mixed salad for a main meal.
For a flavoured Omelette, add some of your favourite ingredients to the whisked eggs before pouring them into the frying pan. The classic options are ham, cheese and mushrooms.
