Roast Lamb & Vegetables

Place the leg of lamb in a large roasting dish and sprinkle with rosemary (fresh if possible). Add a handful of garlic cloves (unpeeled) and pop the lot in a hot oven (gas 5/6) and roast until cooked to your liking. As a guide, allow 30 minutes to start with and then add 15 minutes for each kg for a medium roast or 25-30 minutes/kg for a well done roast. Serve with a selection of freshly cooked vegetables or stir-fry. The garlic cooked this way becomes sweet and can be eaten with the meat.
