Sugar Free Ice Cream (Serves 4)

You will need:
­ Approximately 8oz or 200g of berries - strawberries, raspberries - whatever you fancy,
­ 250ml double cream,
­ 250ml Natural Live Yoghurt,
­ An ice cream machine


What you do with all this:
­ Freeze the berries (remove any leaves or stalks first).
­ Put the frozen berries into a blender with enough cream or yoghurt to cover them and start blending them. Once the frozen fruit is broken down, keep adding the rest of the yoghurt and cream until they are all blended in.
­ Put the mixture in an ice-cream machine (follow the machine instructions) and then put it in the freezer once done.
You can make lots of variations to this recipe:
­ Add more berries for a more fruity flavour,
­ Add more yoghurt and less cream for a more tangy flavour,
­ You can substitute fresh unsweetened orange juice for the yoghurt to make the recipe sweeter and more like a sorbet (Phase 3 only),
­ You can add chopped frozen bananas to the recipe to make the consistency thicker (Phase 3 also).
